Whether its a good day or a bad day, cookies will always be relevant.
Preheat your oven to 180 C-350 F-Gas Mark 4
200g butter
400g flour
1tsp bicarbonate of soda
1 egg
1 tsp salt
360g dark chocolate(i use dark chocolate bars and chop them in to chunks)
300g light brown sugar
100g caster sugar
Cream the butter and both sugars with a wooden spoon.
Add the egg, slowly so it doesn't split the mix.
Add the flour, salt and bicarb and fold into the mix. Fold in your chopped dark chocolate.
cover the bowl with cling film and place in the fridge for at least 30 minutes. (this makes them easier to shape and helps the cooking process)
shape into ping pong ball sizes and place on the tray evenly spread and slightly squish them down. Put in the oven for 12 minutes.
Leave to cool and enjoy.
